A quick little post on some bread... because who doesn't like bread? Plus I'm still on my dough-making-kick with my KitchenAid stand mixer. BUT if you don't have one of your own, you can of course still make all of these recipes and they will turn out just fine.
+ I would highly recommend saving the Roasted Garlic 'recipe' (below) and using it on everything. I love, love, love roasted garlic and the flavor that it gives to every dish you add it to. Enjoy!
Yield: 2 loaves of bread
Prep Time: 2 hours Bake Time: 20 minutes
Serve with butter as a side dish to your main meal OR make it part of your main meal! Use the recipe below to make some seriously delicious cheesy, garlicky bread.
2 1/3 cups all-purpose flour
1 package yeast (2 ¼ tsp.)
½ tsp kosher salt
1 cup warm water, 110° (about 30 seconds in the microwave)
1 egg + 1 Tbsp. water
Combine the warm water and salt in the bottom of a stand mixer (or regular bowl).
Sprinkle the yeast over the top and let sit for at least 5 minutes. The yeast should foam up.
Using the dough hook, gradually beat in the flour until it forms into a doughy ball. About 2-3 minutes.
On a lightly floured surface, knead for another 8-10 minutes (or until your arms will allow). The closer to 10 minutes, the better.
Transfer the dough to a greased bowl. Turn once.
Cover with plastic wrap and let sit in a warm environment until doubled, about 1 hour.
Punch dough down (literally – punching it is all it means). Turn out onto a lightly floured surface and divide in half.
Cover with a damp paper towel and let rise for another 10 minutes.
Roll each half out into large rectangles. Starting from the long side, roll each rectangle up.
Moisten the edges to keep them closed and taper the ends.
Tapering the ends basically means to just fold them under to make it nice and neat.
Transfer the loafs to a greased baking sheet, seam-side down. Cover them with a damp paper towel and let rise for another 35 min.
Preheat the oven to 375°.
Using a very sharp knife, make ¼ in.-deep, diagonal cuts into the loaves, about 1 in. apart.
In a small bowl, lightly beat the egg and 1 Tbsp. of water. Brush this egg wash over the top of both loaves of bread.
Bake for 20 minutes, or until golden brown.

Prep Time: 45 minutes Bake Time: 5 minutes
1 batch of French Bread – 2 loaves
½ cup butter (1 stick)
1 head of garlic, roasted and mashed
½ tsp. kosher salt
½ tsp. onion powder
1 tsp. dried basil
1 tsp. dried parsley
1 tsp. dried oregano
¼ cup parmesan
1 cup shredded mozzarella
- Preheat the oven to 400°.
- Cut off the top end of your head of garlic, making sure to expose the tips of each clove. Lightly drizzle the top with olive oil. - Wrap the entire head of garlic in tin foil.
- Roast for 40-45 minutes, or until the garlic is soft to the touch.
- When it is done, open up the tin foil to let air in and let it cool until you are able to handle it. Careful -- it's super hot!
- Gently squeeze all of the garlic out of its skin and into a bowl. Mash it all up.
Preheat the oven to ‘broil’.
Using a big bread knife, cut the 2 loaves of French Bread in half, lengthwise, and place them on a foil-lined baking sheet.
Melt the butter in the microwave. Add the mashed up roasted garlic and combine well.
Using a brush, slather all 4 halves of the bread in the garlicky butter.
In a small bowl, combine the last 6 ingredients. Sprinkle liberally over the top of the halves.
Top with all of the shredded mozzarella that you want - I obviously got a little heavy-handed cause, why not?!
Place under the broiler for about 5-ish minutes, or until the cheese is bubbly and golden-brown. The timing is going to vary depending on the strength of your oven/broiler.
Once the loaves are cool to the touch (but not too cool), slice into pieces and enjoy!
