Crunchy Roasted Broccoli

looking for a quick and easy side dish? broccoli is always a good choice. this recipe tosses it in fresh lemon juice, garlic, some spices and then it is roasted until crunchy. I will even make this as a side dish to my eggs in the morning for breakfast. it's a great way to get all your Vitamin K & C and folic acid into your system without even knowing because it tastes so delish!

CRUNCHY ROASTED BROCCOLI

Yield: 4 servings Prep Time: 5 minutes Bake Time: ~20 minutes

INGREDIENTS

12 oz. bag of broccoli [Trader Joes]

3 Tbsp. olive oil

3 Tbsp. lemon juice [juice of 1 lemon]

½ tsp. kosher salt

½ tsp. garlic powder

¼ tsp. lemon pepper

DIRECTIONS

Preheat the oven to 400°.

In a large bowl, toss all of the ingredients together, ensuring that all of the broccoli pieces are coated evenly.

I like to keep the broccoli in big bite-sized pieces – if you make them too small, they will roast away to burnt pieces!

Transfer the broccoli to a prepared [foil-lined] baking sheet.

Roast for 10 minutes, flip the broccoli and roast for 10 more minutes.
