I have always loved smoothies but have recently become even more obsessed with them. They are the perfect go-to if you aren’t necessarily hungry but know that you need to eat, they can be healthy and are just absolutely delicious! This green smoothie packs in a ton of nutrients [that you seriously can’t even taste], it’s a beautiful color and is tastes wonderful. Another nice thing about smoothies? You can adjust them to your liking. Switch up the fruit and/or juices to whatever you are feeling.
But really... I can't stress enough that you should definitely include the spinach. Or kale? Whatever tickles your fancy. You won't even know that it's in there. Use my recipe below for the spinach [ice] cubes. It an easy way to ensure that you are incorporating those healthy greens and it's a great way to preserve your fresh spinach – they last MUCH longer. 2 of those babies will replace ½ cup of fresh spinach in your smoothies.
Yield: 1 serving Prep Time: 5 minutes
1 handful of fresh spinach OR 2 spinach cubes [see below]
1 cup pineapple juice
½ cup plain Greek yogurt
1 Tbsp. ground flax seed
Blend all of the ingredients together until smooth.
SPINACH [ice] CUBES
Yield: 16 cubes Prep Time: 5 minutes Freeze Time: 1 hour
3 handfuls of fresh spinach
½ cup water
1 Tbsp. coconut oil
Blend all of the ingredients together in a food processor.
Pour the mixture evenly over the 16 slots in the ice cube tray.
Freeze for at least 1 hour, or until frozen.
