These pancakes are HEALTHY! They are dairy-free, sugar-free and can be made gluten-free if you use GF oats. They are light and fluffy and full of flavor from the banana. Because they are so healthy, you can spice them up with chocolate chips, butter and even a little sprinkle of sifted powdered sugar on top. OR you can continue with the health-kick and spread a little peanut butter over the top, add more fruit and/or do a drizzle of honey. Either way, you get to eat pancakes for breakfast whenever you want and not feel bad in the slightest!
BANANA OAT PANCAKES
Yield: 4 servings Prep Time: 5 minutes Cook Time: 5-10 minutes
½ cup vanilla almond milk, unsweetened
1 ripe banana
2 Tbsp. honey
1 tsp. vanilla extract
1 ½ cup oats
2 tsp. baking powder
3 Tbsp. flax seed*
½ tsp. kosher salt
powdered sugar, sifted
Place all of the ingredients in a food processor [or blender] and pulse on high until smooth.
Heat a pan or skillet over medium-heat. Once warm, coat with non-stick cooking spray.
Pour out the batter, using ¼ cup per pancake, onto the skillet.
Cook for 2 minutes on one side, flip and cook for another 1-2 minutes.
You’ll know to flip when the batter starts bubbling up.
Serve immediately with butter, syrup and fresh fruit!
