looking for a simple vinaigrette that will go well on all of your salads? something that you can make a batch of to keep in your fridge? this recipe is for you! ditch the store-bought salad dressing and make this simple, healthy and delicious vinaigrette packed with fresh flavor. it is very few ingredients and I promise you that it will pair nicely with all of your salads, veggies, grain bowls, etc. it would even work nicely as a marinade! this dressing goes especially well tossed into my Zesty Chopped Salad.
simple lemon & za'atar-spiced vinaigrette
yield: approximately ½ cup prep time: 5 minutes
INGREDIENTS
1 garlic clove
1 small shallot
¼ cup fresh parsley
1 tsp. Dijon mustard
¼ cup lemon juice
¼ cup olive oil
½ Tbsp. Za’atar
salt & pepper, to taste
DIRECTIONS
Add all of the ingredients to the base of a food processor and pulse until smooth, about 1 minute.
