are you ever just craving a good salad but never know where to get one and then you make one at home and it just isn't all that filling or satisfying? I promise you this salad will change all that. it packs a serious punch with all of the different flavors floating around, not only in the toppings but also in the absolutely delicious vinaigrette.
I highly suggest you give the recipe below a shot [assuming you like all of the ingredients] like most of my dishes, feel free to switch things depending on your liking/cravings. the nice thing about the ingredients I've included is that they are mostly lying around in your fridge anyways. so although it might seem like a long ingredient list, peep through your fridge and cabinets before you go purchasing everything.
this salad would work perfectly as a side dish [I like to serve it with my Sausage Stromboli] but it would also work as the main entree for either lunch or dinner.

ZESTY CHOPPED SALAD
Yields: 4 servings Prep Time: 15-20 minutes
INGREDIENTS
2/3 cup cooked ditalini pasta [optional]
1 large head of romaine lettuce, chopped
1/3 cup chickpeas
1/3 cup cucumber, chopped
1/3 cup red onion, very thinly sliced
1/3 cup hearts of palm, chopped [big chunks]
6 slices of salami
½ cup ciliengini mozzarella, halved
¼ cup Greek olives, chopped
¼ cup pepperoncini, chopped
¼ cup fresh parsley, chopped
½ tsp. dried oregano
¼ tsp. kosher salt
¼ - ½ cup of my Lemon & Za’atar-Spiced Vinaigrette
DIRECTIONS
If adding the ditalini pasta, cook according to the directions on the package.
Chopped all of your veggie/salad ingredients to your preferred sizes.

Toss all of the ingredients in a large bowl.
Add your desired amount of vinaigrette and toss until everything is well-combined and coated in dressing.
Season with salt and oregano.
