this carrot dish requires only FOUR ingredients (+ S and P) and about 10 minutes of your attention. you can throw everything in the pan, put the lid on and let those babies braise... just check in on them every now and then.

MAPLE GLAZED CARROTS
Yields: 4-6 servings
Cook Time: 25-30 minutes
INGREDIENTS
1 ½ lbs. petit rainbow carrots*
1 stick of butter
¼ cup maple syrup
1 Tbsp. fresh thyme
fresh lemon juice (½ lemon worth)
1 tsp. Kosher salt
freshly ground black pepper
DIRECTIONS
- Melt the butter in a large sauté pan over medium-low heat.
- Add the carrots, cover and let braise (stirring occasionally) until tender, about 20-30 minutes.
- Increase the heat to medium and add the maple syrup and lemon juice. Cook for 2 more minutes.
- Season with salt, pepper and thyme. Mix well and serve immediately!
NOTES
*I get Les Petites Carrots of many colors from Trader Joes – I love the fun, bright colors, you don’t need to peel them and they are already perfect size! You could also use baby carrots, diced carrots or large carrots peeled and quartered.
