this here is your traditional banana bread with the addition of plain greek yogurt [you can substitute sour cream] to make it extraordinarily moist and even more delicious. you can add chocolate chips for a little extra sweetness!
the very best [chocolate chip] banana bread
yields: 1 loaf/10 slices prep time: 10 minutes bake time: 1 hour
1 stick butter, melted
1 cup white sugar
2 large eggs
1 tsp. vanilla extract
1 ½ cups all-purpose flour
1 tsp. baking soda
½ tsp. kosher salt
3 large very ripe bananas, mashed
½ cup plain greek yogurt or sour cream
optional: ½ cup chocolate chips
Preheat the oven to 350° and prepared a lightly greased 9x5 inch loaf pan.
In the bottom of a stand mixer, beat together the melted butter and sugar until creamy.
Add the eggs and vanilla and continuing mixing until well combined.
Add the flour, baking soda and salt and continuing mixing until well combined.
Fold the mashed bananas, sour cream and chocolate chips [if you’re adding them] to the batter.
Pour the batter into the prepared loaf pan and spread it out evenly.
Bake for 1 hour, or until a toothpick comes out clean.
Let cool for 10 minutes before removing to a wire rack to cool completely.
