Strawberry Shortcake Cupcakes

a super light & fluffy cupcake topped with dressed-up strawberries. they are super simple, delicious and the perfect treat for summer nights. if you aren't a strawberry fan or they aren't in season, use whichever fruit you prefer! or several different types. you can also assemble them in a bunch of different ways -- make cupcakes, a cake or a loaf. top the shortcake & fruit with store-bought whipped cream, my fresh Whipped Cream and/or my super super yummy Strawberry Frosting!


Yields: 20 cupcakes Prep Time: 10 minutes Bake Time: 20 minutes


1 box of white cake mix

¾ cup Greek vanilla yogurt

2 egg whites [large eggs]

1 1/3 cups water

2 cups strawberries, chopped

1 Tbsp. white sugar

homemade whipped cream

1 cup heavy cream

2 Tbsp. white sugar

½ tsp. vanilla extract


Preheat the oven to 350° and prepare cupcake pans with liners.

In a large bowl, mix together the cake mix, Greek yogurt, egg whites and water.

Fill the cupcake liners ¾ of the way full with the shortcake mixture.

Bake for 20 minutes, or until a toothpick comes out clean.

In a medium bowl, stir together the freshly chopped strawberries and sugar.

Top with either homemade whipped cream [or store-bought] and your dressed fruit.

Homemade Whipped Cream

Place the bowl of your stand mixer and the whisk in the freezer for at least 20 minutes.

Combine the heavy cream, sugar and vanilla in the bottom of the mixer.

Using the whisk attachment, whip the cream on the highest speed until stiff peaks form.

*This should only take a minute or two, don’t over whip!
