leek + scallion + herb frittata

frittata - the perfect light and healthy dish for really any meal, especially breakfast and/or lunch. this particular frittata is filled with caramelized leeks, onion and garlic, lots of fresh parsley, diced scallions and topped with crumbles of the deliciously creamy garlic & herb Boursin cheese! it takes about 15 minutes to whip up and 20 minutes to bake. 

 

serve it with some fresh fruit and/or a side salad and some crusty bread or toast. OR make this as a food prep item and refrigerate in an airtight container to eat throughout the week! 

 

leek + scallion + herb frittata

yields: 6 servings               prep time: 15 minutes              bake time: 20 minutes

 

INGREDIENTS

2 Tbsp. butter

1 leek, halved lengthwise, rinsed and sliced

½ small yellow onion, thinly sliced

1 tsp. minced garlic. 

6 large eggs

¼ cup milk 

1 tsp. kosher salt 

freshly cracked black pepper 

2 oz. garlic & herb Boursin cheese, crumbled 

¼ cup freshly chopped parsley 

¼ cup scallions, diced 

 

DIRECTIONS

Preheat the oven to 400° and prepare a lightly-greased 9-inch glass pie dish.

Heat the butter in a large sauté pan over medium heat. 

Add the leeks and onion and sauté for 5 minutes. Add the garlic and sauté for another minute. 

*you are going to want to clean the leeks first! To do this you want to cut the ends off and slice it in half lengthwise. Swish around in water to ensure all of the dirt gets out.

In a large bowl, whisk together the eggs, milk, salt and pepper.  

Mix in the cooked onion, leeks and garlic as well as the parsley and scallions. 

Pour the mixture into the prepared pie dish and top with the crumbled Boursin cheese.  

Bake for 20 minutes.
