I don't have the biggest sweet tooth, but mornings are when I crave something sweet the most... weird, right? unfortunately, whenever I eat something sweet like waffles, pancakes, donuts, etc. I feel blah and gross for the first part of my day and then I'm hungry again about an hour later. I am a big believer is starting your day off with a healthy + balanced breakfast and so when I was craving something sweet the other morning, I wanted to try and make something that would satisfy both my sweet tooth and my desire to put something good into my body. that is how I came up with these waffles!
bananas are loaded with essential vitamins, they are high in fiber and aid in digestion. greek yogurt is packed with probiotics and will provide you with the necessary protein to get you through the day. you can always swap out the all-purpose flour for whole wheat if you wanted to - the waffles just won't be as fluffy.
if you are looking to indulge, serve the waffles with some butter, fruit, maple syrup and a little sifted powdered sugar. if you are looking to keep it healthy, top the waffles with fresh fruit, more greek yogurt, granola and a drizzle of honey.
you can refrigerate any extra batter in an airtight container for up to 1 week - just stir it up a bit prior to using. I would also leave the chocolate chips out of the batter until you are planning on using it.
banana + chocolate chip waffles
yields: 4 servings prep time: 10 minutes cook time: 5 minutes/waffle
1 cup all-purpose flour [or whole wheat]
1 ½ tsp. white sugar
1 tsp. baking powder
¼ tsp salt
1 cup plain Greek yogurt
½ cup vanilla almond milk*
2 small very ripe bananas, mashed
¼ cup chocolate chips
optional: fresh fruit, powdered sugar, honey or organic maple syrup, yogurt and/or granola
equipment: waffle iron
Sift together all of the dry ingredients [flour, sugar, baking powder, salt].
Whisk together the wet ingredients [egg, yogurt, milk, mashed banana] in a large bowl.
Add the dry ingredients to the wet and whisk until everything is well-combined.
Stir in the chocolate chips.
Heat the waffle iron to your desired temperature and spray both sides with cooking spray.
Top with fresh fruit, sifted powdered sugar, honey or organic maple syrup, yogurt and/or granola.
