if you haven’t hopped on the waffling train, now is your time to start! you can seriously throw anything into a waffle machine and completely transform the dish - stuffing waffles, cornbread waffles, grilled cheese waffles, etc., etc. and in this case? lemon-zucchini bread waffles!
what inspired me to make these? other than the fact that I knew they would delicious? I have decided to create a whole new category on the blog focusing on Round 2 Recipes. recipes that you can create by using the leftovers from prreviously meals! it is a great way to conserve food, time and money!

lemon-zucchini bread waffles
yields: 12 bars prep time: 5 minutes cook time: 5 minutes per waffle
1 loaf of my lemon-zucchini bread
2 Tbsp. lemon juice
1 tsp. lemon zest
1 cup powdered sugar + more for sifting on top
Heat up your waffle machine and spray with cooking spray or brush with melted butter.
Place two pieces of lemon zucchini bread, right next to one another, onto the machine and cook until the machine says it's done!
Prepare extra glaze in a small bowl by whisking all of the ingredients together.
*this glaze is going to be a bit thinner than the glaze used for the bread
Top with freshly cut fruit, sifted powdered sugar and additional lemon zest!
