I've started testing out recipes on the menus that I've created for my current bon COOK Cooking Class Offerings, which can be found here, and these babies are one of them! not to mention... who doesn't love a good ice cream sandwich in the summertime?? these are made out of my gooey red velvet cookies and strawberry ice cream!
bon COOK products used >> perforated baking sheet, bonmat and polyamide spatula
red velvet + strawberry ice cream sandwiches
yields: 12 sandwiches prep time: 2 hours & 10 minutes bake time: 12 minutes
8 oz. cream cheese, softened
½ cup butter (1 stick), softened
1 tsp. vanilla extract
1 package of boxed red velvet cake mix
12 scoops of strawberry ice cream
Place the softened butter and cream cheese in the base of a stand mixer, or a medium-sized bowl, and beat on low speed until smooth. Beat in the egg, then the vanilla extract and then the cake mix. Continue until well-combined.
Cover the bowl with plastic wrap and let sit in the fridge for at least 2 hours.
*this step is crucial as it allows the dough to harden up, AKA not be so sticky and messy
Preheat the oven to 350°.
Roll the chilled dough out into 12 balls and place them 2 inches apart on a bon COOK flexi-mat or a lightly-greased baking sheet.
Bake for 12 minutes. Allow to cool for 30 minutes prior to assembling the sandwiches.
Using an ice cream scooper, place a scoop of strawberry ice cream between 2 cookies.
Wrap in tin foil and place in the freezer until ready to eat!
