prosciutto-wrapped stuffed peppers

these bite-sized beauties are the key to a successful dinner party, a happy family and an impressed group of friends. they are packed with flavor and have an array of texture that will leave you instantly satisfied; the mini sweet bell peppers provide a slight crunch and sweetness, the cheesy filling makes them creamy and indulgent and they are finished off with a salty bite from the prosciutto.

yields: 28 peppers halves              prep time: 10 minutes               bake time: 15 minutes



14 mini sweet peppers, halved & de-seeded

1 [5.2 oz.] garlic & herb Boursin cheese, softened

4 oz. cream cheese, softened

3 scallions, diced

¼ cup freshly chopped parsley 

½ tsp. minced garlic 

1 tsp. bon Salt 

freshly ground black pepper 

14 slices of prosciutto 



Preheat the oven to 375° and prepare a large foil-lined baking sheets.

Prepare your peppers by slicing the tops off, cutting them in half lengthwise and deseeding them.

In a medium-sized bowl, combine the Boursin, cream cheese, scallions, parsley, garlic, salt and pepper.

Scoop about 1 Tbsp. of the filling into each pepper half and set aside. 

Slice each piece of prosciutto in half lengthwise and use the halves to wrap the peppers. 

Place the prosciutto-wrapped peppers on the prepared baking dish and bake for 15 minutes.
