salted caramel brownies

it appears that I have been on a bit of a baking kick! I guess that is what fall is all about though, right?? it's time to layer, unwind and curl up with some delicious treats by the fire [or binge-watch your favorite TV show!] and these salted caramel brownies will not let you down. they are decadent, delicious and easy to make. make them for a night in with friends and/or family or bring them as a dish to pass at your upcoming holiday parties!

salted caramel brownies

yields: 8-12 brownies prep time: 10 minutes cook time: 25-30 minutes


1 stick butter

1 cup white sugar

2 eggs

1 tsp. vanilla extract

1/3 cup unsweetened cocoa powder

½ cup all-purpose flour

¼ tsp kosher salt

¼ tsp. baking powder

1 ½ cups soft caramel candies

¼ cup heavy cream

flakey salt, for sprinkling


Preheat the oven to 350°.

Prepare a lightly greased 8x8 glass baking dish.

In the base of a stand mixer, beat together the butter, sugar, eggs and vanilla.

Beat in the cocoa powder flour, salt and baking powder.

Spread the batter into the prepared pan and bake for 25-30 minutes, until a toothpick comes out clean.

Combine the caramel candies and heavy cream in a medium heat-proof bowl.

Microwave for 1 minute in 30-second intervals, stirring between each until the mixture is thick and velvety.

Pour the caramel topping over the brownies. Let set for 5 minutes.

Top with sprinkles of flake salt and enjoy!
