this recipe is filled with all of stuffing's traditional flavors; sage, rosemary, thyme and butter. the fresh herbs really pack a punch and the addition of pork sausage, apples and cranberries provide a savory sweetness that make it absolutely delicious!
herbed apple & sausage stuffing
yields: 10 servings prep time: 15 minutes bake time: 35 minutes
16 oz. pork sausage
1 stick butter
1 large yellow onion, chopped
4 large stalks celery, chopped
1 tsp. minced garlic
1 Tbsp. fresh rosemary
1 Tbsp. fresh thyme
1 Tbsp. fresh sage
kosher salt and freshly cracked black pepper
3 cups chicken broth
3 large eggs, whisked
1 ½ [14 oz.] bags herbed stuffing
3 honeycrisp apple, unpeeled and chopped in big chunks
1 cup dried cranberries
Preheat the oven to 350° and prepare lightly-greased 9x13 glass baking dish.
In a large pot over medium-high heat, break up and sauté the sausage until cooked through.
Remove and set aside on a paper towel-lined plate.
Reduce the heat to medium and melt 4 T butter.
Add the onions and celery and sauté for 5 minutes.
Add the garlic, rosemary, thyme, sage, salt and pepper. Sauté for another minute.
Turn off the heat and add the cooked sausage and stuffing mix to the pot.
Pour broth and whisked eggs over the stuffing, add the apple chunks and cranberries. Stir until fully incorporated.
Transfer the stuffing to the prepared baking dish, spreading it out evenly.
Bake, covered, for 25 minutes. Uncover and bake for another 10, until the tops are browned.
