my cake cookies are seriously the easiest and most delicious cookies in the world. only 5 ingredients, all mixed up together and baked for 12 minutes. since I love these cookies so much, I have tried out different variations; chocolate, funfetti, red velvet, whoopie pies, ice cream sandwiches and now, Oreo!
I took about 2 sleeves of Oreo cookies and pulsed them into tiny pieces using my food processor. you can use whichever method you prefer to break the cookies down; you will want them to be tiny pieces, but not fully ground down. the chunks of Oreo add a nice, crunchy texture to the soft and gooey cookies. you mix the Oreo pieces right into the batter before refrigerating it. then, before baking the cookies, you will coat them in a light layer of powdered sugar, which allows for an almost frosting-like coating over the cookies.
Oreo cake cookies
yields: 24 cookies prep time: 40 minutes cook time: 12 minutes
8 oz. cream cheese, softened
½ cup butter (1 stick), softened
1 tsp. vanilla extract
1 package of boxed vanilla cake mix
15 Oreo cookies, crushed
powdered sugar, for rolling the cookies in
Place the softened butter and cream cheese in the base of a stand mixer.
Mix on low speed until smooth and creamy.
Beat in the egg and the vanilla extract.
Add the cake mix and continue mixing until fully incorporated.
Stir in the Oreo crumbs.
*if you have a food processor, pulse the Oreos until they are in small pieces, but not completely ground up
Cover the bowl with plastic wrap and let sit in the fridge for at least 30 minutes.
*this step allows the dough to harden up so that is not so sticky and messy
Preheat the oven to 350°.
Roll the chilled dough into tablespoon sized balls and then roll them in the powdered sugar until entirely coated.
Place on a bon COOK flexi-mat or a lightly-greased baking sheet, 2 inches apart.
Bake for 12 minutes. The cookies will remain soft and gooey. Let cool completely before serving.
