this here is your classic American-goulash recipe. seasoned meat and veggies sautéed up and cooked down in a beef broth mixture. the macaroni noodles are cooked right in that broth and then everything is mixed up and topped with cheddar cheese! it is the perfect comfort food meal that is quick and easy to make.


yields: 8 servings               prep time: 10 minutes              cook time: 45 minutes


1 lb. meatloaf meat

1 yellow onion, diced

1 green bell pepper, seeded & diced

1 ½ tsp. minced garlic [3 cloves]

1 Tbsp. Italian seasoning

1 tsp. seasoned salt

1 [15 oz.] can diced tomatoes

1 [15 oz.] can tomato sauce

3 cups beef broth

2 Tbsp. Worcestershire sauce

1 large bay leaf

2 cups uncooked elbow macaroni

1 ½ cup shredded cheddar cheese

freshly chopped parsley, for topping


Heat 1 T olive oil in a large pot over medium-high heat.

Add the meat and cook for 3-5 minutes. Drain any grease if needed.

Add the diced onion, bell pepper and sauté for 5 minutes.

Add the garlic, Italian seasoning, seasoned salt and sauté for another minute.

Stir in the diced tomatoes, tomato sauce, beef broth, Worcestershire and bay leaf.

Place the lid on and let simmer for 20 minutes.

Stir in the uncooked macaroni, return the lid and continue to simmer for another 20 minutes.

Remove and discard bay leaves.

Sprinkle the cheese over the top, return the lid and let sit for 5 minutes, or until the cheese has melted.

Season with kosher salt and freshly cracked black pepper, to taste, and freshly chopped parsley.
