chocolate chip oatmeal cookies

a deliciously sweet and salty oatmeal cookie that is chewy on the inside and crisp on the outside!

chewy chocolate chip oatmeal cookies

yields: approx. 24 cookies               prep time: 10 minutes              cook time: 10-12 minutes  


2 sticks of butter, room temperature

1 ½ cups light brown sugar, packed

½ cup white sugar

2 large eggs, room temperature

2 Tbsp. milk

1 Tbsp. vanilla extract

2 cups all-purpose flour

1 tsp baking soda

¾ tsp. kosher salt

2 ½ cups old fashion oats

1 cup milk chocolate chips

flakey salt, for topping


  • Preheat the oven to 350° and prepare 2 large foil-lined, lightly greased baking sheets.

  • In the base of the stand mixer, beat together the butter and 2 sugars using the paddle attachment.

  • Beat in the eggs, one at a time. Add the milk and vanilla extract and continue mixing until smooth and creamy.

  • In a separate bowl, whisk together the flour, baking soda and salt.

  • With the mixer still running, slowly add the dry mixture to the wet. Mix until fully incorporated.

  • Using a spatula, stir the oats and chocolate chips into the batter.

  • Scoop 2-inch balls of the dough out and place them evenly on the prepared baking sheets.

  • Sprinkle flakey salt over the tops of each dough ball.

  • Bake one sheet at a time, for 10-12 minutes.

  • The cookies should be golden around the edges and still slightly soft in the center.

  • Mine cooked for about 11 minutes!

  • Allow the cookies to rest for 15 minutes on the baking sheet before transferring them to a cooling rack.
