a deliciously sweet and salty oatmeal cookie that is chewy on the inside and crisp on the outside!
chewy chocolate chip oatmeal cookies
yields: approx. 24 cookies prep time: 10 minutes cook time: 10-12 minutes
2 sticks of butter, room temperature
1 ½ cups light brown sugar, packed
½ cup white sugar
2 large eggs, room temperature
2 Tbsp. milk
1 Tbsp. vanilla extract
2 cups all-purpose flour
1 tsp baking soda
¾ tsp. kosher salt
2 ½ cups old fashion oats
1 cup milk chocolate chips
flakey salt, for topping
Preheat the oven to 350° and prepare 2 large foil-lined, lightly greased baking sheets.
In the base of the stand mixer, beat together the butter and 2 sugars using the paddle attachment.
Beat in the eggs, one at a time. Add the milk and vanilla extract and continue mixing until smooth and creamy.
In a separate bowl, whisk together the flour, baking soda and salt.
With the mixer still running, slowly add the dry mixture to the wet. Mix until fully incorporated.
Using a spatula, stir the oats and chocolate chips into the batter.
Scoop 2-inch balls of the dough out and place them evenly on the prepared baking sheets.
Sprinkle flakey salt over the tops of each dough ball.
Bake one sheet at a time, for 10-12 minutes.
The cookies should be golden around the edges and still slightly soft in the center.
Mine cooked for about 11 minutes!
Allow the cookies to rest for 15 minutes on the baking sheet before transferring them to a cooling rack.
