these mashed potatoes are the creamiest, most flavorful potatoes that you will ever eat! they are made with only 5 ingredients, most of which you probably already have in your kitchen, and cooked up in 30 minutes!
creamy garlic mashed potatoes
yields: 6 servings prep time: 10 minutes cook time: 20 minutes
3 lbs. russet potatoes, peeled and cut into large cubes
1 head of roasted garlic
1 stick butter
¾ cup heavy cream, warmed
¾ sour cream
1 tsp. kosher salt + more to taste
freshly ground black pepper
optional: freshly chopped parsley and/or chives
Melt the butter in a small saucepan over low heat.
Reduce the heat to a simmer and add the mashed up roasted garlic, allowing it to infuse while the potatoes cook.
In a large pot, add the potatoes and enough water to cover them. Generously season with salt.
Bring the water to a rolling boil and let cook until potatoes are fork tender, about 15-20 minutes.
Drain the potatoes – removing ALL excess liquid – return to the pot and mash.
Pour in the melted garlic-butter and salt.
Using a hand mixer, beat until whipped and butter is incorporated, about 2 minutes.
Pour in the warm heavy cream and continue mixing for another 2 minutes, until smooth.
Add the sour cream and mix on the lowest setting until creamy.
Season with salt and pepper, transfer to a serving dish and serve hot!
Optional: top with freshly chopped parsley and/or chives.
