I took my deliciously moist banana bread batter [it really is the best ever!], folded some frozen blueberries in baked it up into muffins. serve them warm, with a smear of butter for breakfast, a snack or dessert!
blueberry banana bread muffins
yields: 12 muffins prep time: 10 minutes bake time: 30-35 minutes
5 Tbsp. butter, melted
2/3 cup white sugar
1 large eggs
¾ tsp. vanilla extract
1 cup all-purpose flour
¾ tsp. baking soda
¼ tsp. kosher salt
2 very ripe bananas, mashed
¼ cup plain greek yogurt or sour cream
½ cup blueberries, fresh or frozen
Preheat the oven to 350° and line a muffin tray with 12 liners.
In the bottom of a stand mixer, beat together the melted butter and sugar until creamy.
Add the eggs and vanilla and continuing mixing until well combined.
Add the flour, baking soda and salt and continuing mixing until well combined.
Fold the mashed bananas, yogurt and blueberries to the batter.
Evenly pour the batter into the 12 muffin liners.
Bake for 30-35 minutes, or until a toothpick comes out clean.
Let cool for 10 minutes before serving. Serve warm with butter!
