blueberry banana bread muffins

I took my deliciously moist banana bread batter [it really is the best ever!], folded some frozen blueberries in baked it up into muffins. serve them warm, with a smear of butter for breakfast, a snack or dessert!

yields: 12 muffins prep time: 10 minutes bake time: 30-35 minutes


5 Tbsp. butter, melted

2/3 cup white sugar

1 large eggs

¾ tsp. vanilla extract

1 cup all-purpose flour

¾ tsp. baking soda

¼ tsp. kosher salt

2 very ripe bananas, mashed

¼ cup plain greek yogurt or sour cream

½ cup blueberries, fresh or frozen


  • Preheat the oven to 350° and line a muffin tray with 12 liners.

  • In the bottom of a stand mixer, beat together the melted butter and sugar until creamy.

  • Add the eggs and vanilla and continuing mixing until well combined.

  • Add the flour, baking soda and salt and continuing mixing until well combined.

  • Fold the mashed bananas, yogurt and blueberries to the batter.

  • Evenly pour the batter into the 12 muffin liners.

  • Bake for 30-35 minutes, or until a toothpick comes out clean.

  • Let cool for 10 minutes before serving. Serve warm with butter!
