glazed lemon poppy seed [cake] cookies

my infamous cake cookies are back again! in another new flavor! and I must say... this might be my most favorite one yet. I used lemon-flavored cake mix, added poppy seeds and drizzled a homemade lemon glaze over the top.

yields: 24 cookies              prep time: 40 minutes               cook time: 12 minutes

 

INGREDIENTS

8 oz. cream cheese, softened

½ cup butter (1 stick), softened 

1 egg

1 tsp. vanilla extract

1 package of boxed lemon cake mix

1 Tbsp. poppy seeds

1 cup powdered sugar

2 Tbsp. lemon juice

1 tsp. lemon zest

 

DIRECTIONS

  • Place the softened butter and cream cheese in the base of a stand mixer.

  • Mix on low speed until smooth and creamy.

  • Beat in the egg and the vanilla extract.

  • Add the cake mix and poppy seeds and continue mixing until fully incorporated.

  • Cover the bowl with plastic wrap and let sit in the fridge for at least 30 minutes. 

    • *this step allows the dough to harden up so that is not so sticky and messy

  • Preheat the oven to 350°.

  • Roll the chilled dough into tablespoon sized balls and place them on a  lightly-greased baking sheet, 2 inches apart.

  • Bake for 12 minutes. The cookies will remain soft and gooey. Let cool completely before serving.

  • While the cookies are cooling, whisk together the powdered sugar, lemon juice and zest in a small bowl.

  • Drizzle the lemon glaze over the tops of the cookies and let them sit for another 10 minutes to allow the glaze to set.
