my infamous cake cookies are back again! in another new flavor! and I must say... this might be my most favorite one yet. I used lemon-flavored cake mix, added poppy seeds and drizzled a homemade lemon glaze over the top.
glazed lemon poppy seed [cake] cookies
yields: 24 cookies prep time: 40 minutes cook time: 12 minutes
8 oz. cream cheese, softened
½ cup butter (1 stick), softened
1 tsp. vanilla extract
1 package of boxed lemon cake mix
1 Tbsp. poppy seeds
1 cup powdered sugar
2 Tbsp. lemon juice
1 tsp. lemon zest
Place the softened butter and cream cheese in the base of a stand mixer.
Mix on low speed until smooth and creamy.
Beat in the egg and the vanilla extract.
Add the cake mix and poppy seeds and continue mixing until fully incorporated.
Cover the bowl with plastic wrap and let sit in the fridge for at least 30 minutes.
*this step allows the dough to harden up so that is not so sticky and messy
Preheat the oven to 350°.
Roll the chilled dough into tablespoon sized balls and place them on a lightly-greased baking sheet, 2 inches apart.
Bake for 12 minutes. The cookies will remain soft and gooey. Let cool completely before serving.
While the cookies are cooling, whisk together the powdered sugar, lemon juice and zest in a small bowl.
Drizzle the lemon glaze over the tops of the cookies and let them sit for another 10 minutes to allow the glaze to set.
