cake pops are a fun, hand-held dessert that you can make in a ton of different varieties. they are made with only 3 ingredients; cake mix [+ ingredients needed to bake the cake - typically water, oil and eggs], frosting and chocolate for melting. you can get creative with both the flavors you use on the inside, and with the decorating you do on the outside!

strawberry-cheesecake cake pops
yields: 20 cake pops prep time: 20 minutes chill time: 1 hour
INGREDIENTS
1 [15.25 oz.] box of strawberry cake mix + ingredients to make cake
½ cup cream cheese frosting
¼ cup freeze-dried strawberries, crushed
16 oz. white chocolate, melted
sprinkles, for topping
20 cake pop sticks
DIRECTIONS
Make the cake according to the box’s directions. Let cool.
Place the cake in a large bowl and crumble it into fine crumbs.
Add the frosting and crushed strawberries and mix until fully incorporated – using your hands can be the easiest route!
Using a tablespoon or a mini ice cream scoop, scoop out the mixture and roll into tight balls, until all the mixture is gone.
Place the cake balls on a parchment paper-lined baking sheet.
Melt 2-4 oz. of the chocolate in the microwave.
Dip the tip of the cake pop sticks into the chocolate and insert them into the cake balls about half-way.
Place the baking sheet in the freezer for about 30 minutes.
Melt the remaining chocolate and transfer to a large cup or something that will make it easy to submerge the entire cake ball.
Remove the cake balls from the freezer.
Dip each cake ball carefully into the chocolate until covered.
Let the excess chocolate drip off. Swirl and tap gently, if needed. Transfer back to the parchment paper-lined baking sheet.
Immediately add the sprinkles after each dip as the chocolate will harden quickly.
Place the baking sheet back into the freezer for quicker setting time.
Store in a cool area in a single layer, in an airtight container.
