this is a multi-purpose dressing that is super delicious, easy to make and healthy! you toss all the ingredients into a blender or food processor and pulse until smooth. don't have all of the fresh herbs? no worries! you can leave some out or add more in. the types and amounts of the fresh herbs won't ruin the taste! although, FRESH herbs are the way to go... not dried.
serving suggestions:
as a dip - add a bowl of green goddess to your crudite platter and see your veggies disappear
as a salad dressing - green goddess can be a bit thick, but pairs wonderfully with hearty greens like romaine.
as a seafood pairing - serve green goddness on the side, or tossed in with crab, flakey white fish and/or shrimp
as a replacement for mayo - green goddess makes a wonderful addition to burgers and/or sandwiches

green goddess dressing
yields: about 2 cups prep time: 5 minutes
INGREDIENTS
½ cup plain yogurt
¼ cup mayo
1/3 cup olive oil
½ cup fresh parsley
¼ cup fresh cilantro
¼ cup fresh basil leaves
½ cup spinach leaves
2 green onions, sliced
1 Tbsp. lemon juice
½ tsp. minced garlic
1 tsp. honey
kosher salt & freshly cracked black pepper, to taste
DIRECTIONS
Place all the ingredients into a blender or food processor and blend or pulse until smooth.
Chill before using.
Refrigerate in an airtight container for up to 1 week.
