you wont ever want to buy packaged Spanish rice from the store again! this recipe is so easy and quick. it is made with minimal ingredients, most of which you probably already have on hand.
**these directions are based off my using a stove-top pressure cooker. you can also use an electric pressure cooker/instant pot by using the sauté setting and high pressure cook setting
[pressure cooker] Spanish rice
yields: 6-8 servings prep time: 10 minutes cook time: 4 minutes
1 Tbsp. butter
½ medium yellow onion, diced
½ red bell pepper, diced
1 tsp. minced garlic
2 cups vegetable broth
1 ½ cups white rice
½ tsp chili powder
¼ tsp. cumin
1 cup chunky salsa
Melt butter over medium heat in the base of the pressure cooker.
Sauté the onion and bell pepper until soft, about 5 minutes.
Add the garlic and sauté for another minute.
Pour in the vegetable broth, rice, chili powder and cumin. Stir to combine.
Add the salsa but do not stir as the tomatoes could burn.
Cook on high for 4 minutes followed by a natural release.
Stir to fluff up the rice and eat hot!
