these muffins are absolutely delicious! they are simple, yet decadent and full of flavor. enjoy them for breakfast or dessert! the original recipe by Olive and Artisan can be found here.
browned butter banana muffins + chocolate chips
yields: 22 muffins prep time: 20 minutes cook time: 24 minutes
¾ cup butter, divided
3 large or 4 small bananas, very ripe
1 tsp. vanilla extract
1 cups sugar
1 ¾ cups flour
1 tsp. baking soda
½ tsp. kosher salt
½-1 cup milk chocolate chips
¼ cup browned butter, from reserve
½ cup flour
¼ cup sugar
¼ cup brown sugar
pinch of salt
Melt the butter in a skillet over medium heat. If you slice it up first, it will melt more evenly.
Once melted, the butter will foam up a bit. Continue whisking and cooking until you see lightly browned specks begin to form at the bottom of the pan.
When the butter is browned, it should have a nutty aroma. Let cool for at least 10 minutes.
Preheat the oven to 350° and prepare your muffins pans.
In the base of your stand mixer, add ½ cup of the browned butter, bananas, egg, sugar, and vanilla. Using the paddle attachment, beat until well combined.
Add the flour, baking soda and salt. Continue beating until fully incorporated.
Remove the bowl from the mixer and gently fold in the chocolate chips.
Fill the muffin tins until they are about ¾ full.
In a small bowl, mix the remining ¼ cup browned butter, flour, sugar, brown sugar, and salt to make the streusel topping.
Evenly sprinkle the streusel over the tops of the muffins.
Bake for 22-24 minutes.
