have you ever had Chicken Bake from Costco's food court? it's amazing and surprisingly, easy to make! I recreated a copycat version swapping out the Caesar dressing for ranch. I made my own pizza dough, but you could always use premade as well.

yields: 4 servings prep time: 1 hour & 15 minutes cook time: 15-20 minutes
INGREDIENTS
1 lb. pizza dough
1 ½ cups shredded chicken, *I used rotisserie
6 thick-cut slices of bacon, cooked & crumbled
1/3 cup ranch
2 large scallions, thinly sliced
2 cups shredded mozzarella
½ cup parmesan cheese
egg wash [1 egg + 1 Tbsp. water]
Italian seasoning
flakey salt
pizza dough
¾ cup water [110°], *microwave for 30 seconds
½ tsp. white sugar
1 1/8 tsp. dry yeast
1 tsp. salt
1 ¾ cups all-purpose or bread flour
1 Tbsp. olive oil
DIRECTIONS
Pizza Dough
Combine the sugar and water in the base of a stand mixer.
Sprinkle the yeast over the top and let sit for 5 minutes, until the yeast foams up a bit.
Add the flour, salt, and olive oil. Using the dough hook attachment, beat until the dough forms into a ball.
If the dough is too sticky, add 1 Tbsp. flour 1 at a time. If it is too dry, add water.
Turn the dough out onto a lightly floured surface and knead for a couple more minutes.
Place the dough in a lightly greased bowl, turn once and cover with plastic wrap.
Let sit in a warm or room temperature space until it doubles in size, about 1 hour.
Turn the dough back out onto the lightly floured surface and divide into 2 even pieces.
Roll each piece of dough out to about ¼-inch thickness, leaving one edge longer than the other, about 10”x8” [although, it does not need to be perfect!]
Preheat the oven to 400°.
Divide the remaining ingredients among the two pizza rounds; start by spreading the ranch evenly on top of the dough, add the chicken, bacon, mozzarella, parmesan, and scallions.
Roll each dough round into a log – starting with the long end closest to you, carefully and tightly rough the dough like a jelly roll. Tuck both ends of the rolls under to seal it shut.
Transfer the rolls to a parchment paper lined baking sheet.
Brush the entirety of each roll with egg wash [1 egg whisked with 1 Tbsp. water].
Top with additional mozzarella and parmesan cheese, Italian seasoning, and flakey salt.
Bake for 15-20 minutes, until browned on top.
Serve with a side of ranch and enjoy!
